Raspberry and cream sponge cake

Nothing groundbreaking here, just a standard victoria sponge with fruit and a whipped cream filling. However there is something extra lovely about filling and decorating a cake with homegrown raspberries and homemade jam (rhubarb and raspberry in this case.) 

It's hard to beat raspberries (or strawberries) and cream for a summery cake. It's light and fresh, perfect for a summer birthday.



Our "fruiting garden" is developing very nicely. I picked roughly 1kg of blackcurrants last night, our biggest haul to date. Next up will be the loganberries and second crop of raspberries. I know I should freeze some of them but they will most likely end up in jam as my obsession with making jam is still going strong. All the fruit means all the jam!
